Oaty Cookies – easy, tasty, what else do you want?

Posted by Jessica on March 1, 2011 in Vegan Cooking |

Ok, so first post and I thought I would make it a delicious one. Yes I see the irony in waiting till March to start writing a blog on resolutions…but resolutions are not just for new years (hopefully they are for life).

One of the things I have missed is being able to buy ready made biscuits, but also prefer to use ingredients that are in a normal person’s cupboard, instead of buying ‘vegan ingredients’ like egg replacer, milk replacer blah blah. This recipe is delicious, easy and you probably have the ingredients in your cupboard – so just try and stop yourself making them!

Ingredients:

1 cup brown sugar
1/2 cup white sugar
1/4 cup plus 1 teaspoon oil
3 tablespoons water
1 banana, mashed
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons cinnamon
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups oats

Directions:

1. Preheat oven to 350 degrees F. Mix the vegan sugars, oil, and water.  Add the banana and vanilla. Separately, mix flour, baking soda, cinnamon, and salt.

2. Mix flour mixture and wet mixture. Stir in the oats.  If it is too thin, let stand a bit so the oats can absorb the excess liquid.  If too thick, add more water.

3. Drop them by tablespoon onto cookie sheet, and bake for 13 minutes.  To check if they are done, flip one over and it should be browned. Check inside doneness.

Serves: about 3 dozen cookies
